Thai-Inspired Rainbow Wrap With Creamy Peanut Dipping Sauce! Crunchy, Refreshing and Filling!

At COMFORT KETO, we’re ushering in the spring season with lots of fresh flavors. We just can’t help it after this many months of serious winter weather, we feel the need for fresh veggies. As it is still a bit chilly, so, there’s definitely some comfort food elements going on here. Actually, Chef Janine feels that all kinds of authentic ethnic foods are ultimate comfort foods.





Next week, Chef Janine is serving her Thai-inspired ketogenic Rainbow Wrap Sandwich, a super flavorful light meal that won’t leave you hungry! If you enjoy your wrap sandwich for an early lunch, it will keep you full all afternoon! So delicious, fun to eat!


This wrap sandwich is packed with all kinds of seasonal fresh veggies such as fine cut sticks of carrot, strips of red bell pepper and English cucumber, finely chopped red cabbage, some dandelion greens, micro greens and bean sprouts; plenty of crunch, fiber and virtually every color of the rainbow. This colorful combo is then garnished with some fresh cilantro and green onion for an extra bit of freshness, and a few crumbs of chopped roasted peanuts for nutty flavor.


Chef Janine drizzles her house made red curry is on the finely cut grilled pork strips. All this goodness is wrapped in a soft blanched collard green leaf, thus making this wrap totally gluten free. The creamy peanut dipping sauce made with peanut butter, coconut aminos, rice wine vinegar, lime juice, lemongrass, ginger, and sweetened with monk fruit sweetener makes this combination downright addictive. Once you bite into this protein-packed goodness, you’ll quickly see why it is one of Chef Janine's favorite wrap sandwiches.


  • Note: If you happen to be sensitive or allergic to peanuts, please let Chef Janine know in advance and she will gladly omit the peanut sauce and serve you a delicious curry tahini dressing for dipping & drizzling.

  • Caution! Chef Janine uses toothpicks to secure ingredients are secured inside the wrap together. Make sure to remove the toothpicks before biting into this delicious wrap sandwich.


How To Store


If you decide to enjoy this delicious sandwich, place it in the refrigerator in an airtight plastic bag to save for later. The wrap will stay incredibly fresh in the fridge for 4-5 days. And they are delicious straight from the fridge. Serve them with your creamy peanut dipping sauce and add a dash of hot sauce or red pepper flakes into the dipping sauce if you like it a little spicy.


If you are not on a keto diet, you may add a few rings of caramelized grilled pineapple on the side, and you will be totally hooked.
