Hi friends —It’s Chef Janine here, your metabolic therapy chef, and today I want to talk to you about something I’ve seen affect so many of my clients (and myself): toxic heavy metals.

We live in a world full of unseen exposures — mercury in seafood, lead in old pipes, aluminum in processed foods — and over time, these metals can build up in the body, contributing to everything from brain fog and hormone issues to fatigue and inflammation. 🧪

But here’s the good news: God gave us food as medicine. And in my kitchen, I use food to gently support the body’s natural detox process — especially through what’s called natural chelation.

💡 What Is Chelation?

Chelation (kee-LAY-shun) is simply the process of binding to heavy metals so they can be flushed out — usually through the urine or stool.

In medicine, it’s done with pharmaceuticals like EDTA or DMSA, often in cases of lead or mercury poisoning. But I don’t use those in my work — and you shouldn’t try them without medical supervision.

Instead, I focus on natural chelation: supporting the body’s God-designed detox pathways using nutrient-rich foods and gentle binders.

🌿 Table 1: Natural Chelators for Gentle, Daily Detox

Chelator – Type – Common Form

How It Works + Brain-Blood Barrier Access

Metal Targets

Cautions / Notes

🌿 Cilantro  – Natural Herb – Fresh, Extract

Mobilizes metals from tissues ⚠️ May mildly cross the brain-blood barrier

Mercury, Aluminum

Best paired with a binder (like chlorella) to avoid redistribution

🟢 Chlorella – Natural Algae – Powder, Tablets

Binds metals in the gut 🚫 Does not cross the brain-blood barrier

Mercury, Lead, Cadmium

Excellent binder; supports gut and immune health

💊 Alpha-Lipoic Acid – Antioxidant – Capsules

Binds metals, recycles glutathione, supports mitochondria ✅ Crosses the brain-blood barrier

Mercury, Arsenic

Use in low, frequent doses to avoid redistributing metals

🧬 NAC + Glutathione – Amino Acid / Antioxidant – Capsules, Liposomal

Boosts glutathione and liver detox ⚠️ NAC may mildly cross the brain-blood barrier

Mercury, Lead, Arsenic

Indirect chelation; best with full liver/gut support

🍋 Modified Citrus Pectin – Natural Fiber – Powder, Capsules

Binds metals in digestive tract 🚫 Does not cross the brain-blood barrier

Lead, Arsenic, Cadmium

Very gentle; ideal for long-term detox and safe for children (with guidance)

🌰 Selenium – Mineral – Brazil Nuts, Supplements

Forms complexes with mercury, protects cells 🚫 Does not cross the brain-blood barrier

Mercury

Antioxidant support; avoid excess intake (>400 mcg/day)

💉 Table 2: Pharmaceutical (synthetic) Chelators — Stronger, Medically Supervised Detox

Chelator – Type – Common Form

How It Works + Brain-Blood Barrier Access

Metal Targets

Cautions / Notes

💊 DMSA – Synthetic – Oral Capsules

Binds metals in blood and soft tissues ⚠️ Mildly crosses the brain-blood barrier

Lead, Mercury, Arsenic, Cadmium

FDA-approved for lead; may cause rash, GI upset, or mineral loss; always use with binders

💉 EDTA – Synthetic – IV (mostly), Oral (rare)

Strongly binds bloodborne metals 🚫 Does not cross the brain-blood barrier

Lead, Cadmium, Aluminum, Arsenic

Must be done under medical supervision; may deplete essential minerals; potential kidney stress

🧬 Why Glutathione Is the Star of the Show

The real hero in this story is glutathione, your body’s master antioxidant. It binds directly to many metals (especially mercury), protects your cells from oxidative damage, and helps your liver do its daily detox duties.

Glutathione (body’s master antioxidant) is made from three amino acids, Glutamate, Cysteine and Glycine, especially in the liver, where most detoxification happens.

Most of the foods and supplements I use in my protocols either boost glutathione or help the body mobilize and bind metals naturally.

🥬 My Favorite Natural Chelation Tools

Let me take you into my “detox pantry” — these are ingredients I keep on rotation in my kitchen and meal plans:

🌿 Cilantro

Helps pull metals out of deep tissues. I always pair it with a binder (like chlorella) so the metals don’t recirculate.

🍃 Chlorella

A green algae that acts like a sponge for heavy metals in the digestive tract. Think of it as a gentle "clean-up crew."

💊 Alpha-Lipoic Acid (ALA)

This antioxidant crosses the blood-brain barrier, which is rare. It can help escort toxins out of brain tissue — and it helps recycle glutathione.

🧄 Garlic

Rich in sulfur, a must-have mineral for building glutathione. Garlic also helps protect your liver and kidneys from damage.

🍋 Modified Citrus Pectin (MCP)

This supplement binds metals in the gut and is one of the safest ways to support detox gently. I often add it to evening routines.

🧬 Glutathione & NAC

NAC (N-acetylcysteine) helps your body make glutathione. I use it in protocols when people need extra liver support or are dealing with deep toxicity.

🌰 Selenium

Binds with mercury to form a non-toxic compound. You’ll find it in Brazil nuts — just one or two a day is plenty!

🥗 Detox Foods That Boost Glutathione

As a chef, I always say: if it doesn’t taste good, people won’t stick with it. These ingredients are not only healing — they’re delicious too:

  • 🥦 Broccoli, cabbage, kale – Sulfur-rich & full of compounds that stimulate your detox genes

  • 🧅 Onions & garlic – Gut-boosting and glutathione-friendly

  • 🥕 Beets – Help the liver make bile to carry toxins out

  • 🍋 Lemon water – Helps flush the lymph and stimulate bile flow

  • 🥒 Fermented foods – Support your gut (and the gut is a huge part of detox)

⚠️ Detox, But Don’t Overdo It

One thing I always tell my clients: Don’t start detoxing unless your exit doors are open!

That means:

✅ You’re pooping daily 💩

✅ You’re hydrated 💧

✅ You’re not pregnant or nursing

✅ You’re supporting your mineral levels

Too many people jump into detox without support, and that can make things worse. That’s why I build detox into real-life meal plans and use food as the foundation.

🕊️ My Gentle Daily Detox Ritual

Here’s what a day of natural chelation might look like in my world:

Morning:

  • Warm lemon water 🍋

  • Green smoothie with cilantro, chlorella, and ginger 🌿

  • Magnesium or trace minerals

Afternoon:

  • Sulfur-rich lunch: eggs, broccoli, onions 🥚🥦

  • ALA or NAC supplement (with food) 💊

Evening:

  • Light, fiber-rich dinner 🥗

  • Modified Citrus Pectin and a calming herbal tea 🌜

💛 Final Thoughts from My Kitchen to Yours

We’re not meant to live in fear of our environment — but we are called to be wise stewards of our bodies. As a metabolic therapy chef, I believe food is one of the holiest forms of healing — a chance to cleanse the body, restore vitality, and renew the temple God gave us. ✝️

🕊️ Natural chelation is not about extreme detox. It’s about partnering with creation to gently remove the burdens we’ve picked up along the way. 💛

Natural chelation isn’t a trend — it’s part of how we were designed to heal.

Gently. Daily. Through real food. 🌿
