In the month of April 2023, Chef Janine of COMFORT KETO is bringing to you another one of her ketogenic version of the delicious Italian classic: The PESTO CHICKEN CAPRESE!

One of the most popular and delicious combinations found in many dishes of Italian cuisine is CAPRESE. It marries the most notable ingredients in Italian cuisine: tomatoes, fresh mozzarella cheese, fresh basil and ever present olive oil. Origins go back to Capri in early 1920s when this delicious combination was created as a tribute to the tricolor of the Italian flag.

PESTO comes from “pestare,” meaning “to crush into a mortar.” Its first modern recipe dates back to 1860s Genoa, made from local ingredients; basil, pine nuts, garlic, olive oil, Parmigiano-Reggiano and/or Pecorino Romano cheese. Like every version of the pesto, the original recipe is delicious with fish, meats, vegetables, soups, and breads.

In this fine meal, Chef Janine is combining these two traditional recipes into a super delicious keto meal. You will love this gourmet bite of Italian culinary history: The tricolor of the Italian flag and the pesto.
