Oh so good! These melt-in-your-mouth grass-fed beef meatballs wrapped in eggplant (or zucchini) are heaven!
Our ketogenic interpretation of this home-style-cooked meal will give you a sense of Italian homecoming on a Fall night.
We use strictly no hormones - no antibiotics grass-fed beef for this recipe. The juicy meatballs are first sauteed separately and then gently wrapped in lightly olive oil braised eggplant slices. The combination is then topped with a slice of tomato and pepper and baked to perfection. We serve this delicacy with our homemade tomato sauce.
Our side Keto Risotto is one of our best low-carb side dishes. Made with a perfect combination of cauliflower rice, hearts of palm (zero carbs), Parmesan cheese, truffle oil and heavy cream, this gluten-free risotto pairs perfectly with the Italian meatballs wrapped in eggplant. This creamy, rich, cheesy goodness is the perfect satisfying option when you're missing those carb heavy dishes! It is so delicious and satiating that it can be even a course on its own.
